It's Christmas time! Time to celebrate with Rum and Eggnog! Or in this case, Rum and Eggnog Cookies :-)
When it comes to soft cookies versus crunchy cookies, there's normally two opposite camps of people and they lean one way or the other. With me, I enjoy both! If you're not already a soft cookie person, these might just win you over! These soft pillows of rummy goodness have a nice texture and are quite tasty with the flavours of rum and eggnog coming through nicely. Complete with spices to enhance the eggnog, and of course the drizzle of rum glaze tops them off really well!
Cookies:
1/2 cup unsalted butter, room temperature
1/2 cup brown sugar
1/4 cup white sugar
1 egg
2 tbsp rum
1/4 cup eggnog
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp nutmeg
1/2 tsp allspice
1/4 tsp cloves
Glaze:
1/4 cup eggnog
1 3/4 cup icing sugar
2 tbsp rum
1/4 tsp nutmeg
1/4 tsp allspice
In the bowl of an electric mixer, cream together butter and sugars for a couple of minutes until creamy and smooth.
Add egg, eggnog and rum, beating until mixed.
Sift together flour, nutmeg, allspice, cloves, baking soda, baking powder and salt. Add to eggnog mixture, mixing until just combined, scraping down sides of bowl occasionally.
Refrigerate for about 30 minutes.
Grease cookie sheet or use parchment paper.
Scoop out cookie dough (I used a 1 1/2 tablespoon measuring spoon) and place on prepared cookie sheet about two inches apart.
Bake at 350o for 11-13 minutes and transfer to a wire rack to cool.
In a small saucepan, over medium heat, warm up eggnog.
Add icing sugar, rum, nutmeg, and allspice. Whisk until smooth and heated through. Let it cool long enough to thicken a bit.
Drizzle over cookies.
Grate some nutmeg on top, if you'd like.
